I love desserts that don’t require a lot of time or ingredients and Pineapple Upside-Down Cake is one of them! I served this when our pastor and his wife came over for dinner so it’s a keeper in my book!
Ingredients
1/4 cup butter or margarine
1 cup packed brown sugar
1 can (20 oz.) pineapple chunks in juice, drained, juice reserved
1 box yellow cake mix
vegetable oil and eggs as called for on cake mix box
whipped topping for garnish
Heat the oven to 350 degrees.
In 13×9 inch pan, melt butter in oven.
Sprinkle brown sugar over butter.
Arrange pineapple on brown sugar.
Add enough water to reserved pineapple juice to measure 1 cup.
Make cake batter as directed on box, substituting pineapple juice for the water.
Pour batter over pineapple.
Bake 42 to 48 minutes or until toothpick inserted in center comes out clean.
Immediately run knife around side of pan to loosen cake.
Place serving plate upside down onto pan.
Turn plate and pan over.
Leave pan over cake for 5 minutes so brown sugar topping can drizzle over cake.
Remove pan.
Cool 30 minutes and serve warm or cool with whipped topping.

I like the pineapple chunk idea.. pineapple in every bite. I love pineapple upside down cake and haven’t had one in years. I’m inspired.
