Easy Molasses Cookies Recipe

These molasses cookies are a MUST TRY recipe! Made from a basic make ahead starter cookie mix they are deceptively simple and delish!

Anyone who knows me can confirm that chocolate is my favorite food group lol I adore anything with my favorite ingredient in it.

But for some reason I’ve been hankering for something different. These easy molasses cookies have quickly become one of my favorite cookie recipes.

The addition of cinnamon, ginger and cloves gives just enough of a spicy flavor that’ll have you yearning for more!

Since I shared my basic cookie dough mix here (and a recipe for yummy Peanut Butter Cup Cookies) I’ve been working on a few other cookies to make with this mix and I’m here to proudly say this one is a winner!

These luscious little delights are unassuming but completely addictive. I might have actually eaten six when they came out of the oven (for testing purposes only! lol)

As you can see I dressed them up with bit of ribbon which would be perfect for a hostess or teacher gift during Christmas or just because.

Just insert them into a simple paper or plastic bag with these cute mason jar labels (free printable!)

Ingredients

  • softened butter
  • packed brown sugar
  • egg
  • molasses
  • Make Ahead Cookie Mix
  • baking soda
  • ground cinnamon
  • ground ginger
  • ground cloves
  • granulated sugar for rolling cookies

Instructions

Combine butter

Melted butter in white dish

and brown sugar in large bowl.

Beat at medium speed of electric mixer until well blended.

Use a stand mixer to make the blending easy but I don’t have room for one in my small cottage so I just use a hand mixer.

Add egg

Crack egg over cookie dough

and molasses and beat until light and fluffy.

Add molasses to cookie mixture

Stir together make ahead cookie mix (includes all purpose flour),

baking soda,

Add baking soda to cookie mix

teaspoon ground cinnamon,

Add cinnamon to cookie dough

teaspoon ground ginger and teaspoon ground cloves in small bowl.

Add ground cloves to molasses cookie mix

Add flour ingredients into butter mixture and cream together at low speed until well blended.

Chill 3 hours or overnight. If I’m in a hurry I’ll sometimes set the bowl in the freezer covered with plastic wrap for a few minutes to hurry things along.

Heat over to 350 degrees. Shape dough into 1 inch balls and roll in sugar.

If you want to use a cookie scoop for making dough balls that works fine!

Place cookie dough ball on ungreased cookie sheet 2 inches apart and press with a fork if desired.

Bake 10-13 minutes and cool on wire rack.

You can also bake on silicone baking sheets if you have them.

Baking Tips

  • Use parchment paper for baking to keep cookies from sticking.
  • For the first batch bake at the least amount of time. These cookies bake fast so decide if you like chewy or crunchy and adjust the time.
  • It’s important to chill the cookies before baking!
  • Make a batch of Make Ahead Cookie Mix to have on hand when you have a craving!
  • Roll the cookies in 1 inch balls and leave plenty of room in between on cookie sheet. They definitely spread out!

Notes

The cookies came out crispy but softened up the longer they were around (which wasn’t long!)
If you like chewy cookies bake a shorter amount of time. I also used parchment paper but a regular cookie sheet is fine.
Chill until you’re able to shape dough. I put in freezer to save a little time!

  5. Hmmm…but are they crisp or chewy? I’m always on the lookout for the latter 😉 Not crisp and not exactly soft but that wonderful in between chewiness. And for some reason few recipes indicate that!???
