Pineapple Salsa
Fun ideas for throwing a themed Cinco de Mayo party on a budget with inexpensive decorations and easy recipes including pineapple salsa and taquitos.
  • 3 cans chunk pineapple, drained
  • 1 jar roasted sweet peppers, drained
  • 1 red onion, finely chopped
  • 2 jalapeno peppers, stemmed, seeded and chopped
  • 1 clove garlic, minced
  • juice of 1 large lime (or lemon)
  • salt (optional)
  1. In a medium bowl combine drained pineapple, roasted sweet peppers, red onion, jalapeƱo, garlic and lime juice.
  2. Stir until well combined and salt if desired.
  3. Can be served chilled or at room temperature with tortilla chips.
I left out the salt for personal preference.
I also didn't have a lime on hand so I used a lemon.
Fresh pineapple can be substituted for canned.
Fresh red pepper can be substituted for roasted sweet pepper.
