Slow Cooker Potato Soup

There is nothing like coming home to the aroma of soup on a cold, busy day. This slow cooker potato soup recipe is easy and ready when you are!

Ingredients

  • 6 potatoes cubed
  • 2 carrots chopped
  • 1 onion chopped
  • 4 chicken bouillon cubes
  • 4 cups water
  • 1 tsp garlic minced
  • 1 tbs dried parsley
  • salt and paper to taste
  • 1/2 tsp cilantro (optional) chopped
  • 1/3 cup butter
  • 2 cups half & half
  • 6 oz. bacon cooked and chopped

Instructions

  1. Combine all ingredients in slow cooker except milk and bacon.

  2. Cook on low 10 hours or high 3-4 hours.

  3. Stir in half & half during the last hour.

  4. Garnish with chopped bacon.

Recipe Notes

Cilantro can be left out of this recipe, but I love the little bit of spice it gives the soup.

I did not peel the potatoes but if your family prefers no skin go ahead and peel before slicing.

If you don't have bouillon cubes you can substitute 4-5 cups chicken stock.
