Cookie Monster Brownie Cookies

Delicious brownie cookie made from scratch with butter cream frosting.

Ingredients

  • 1 3/4 cups flour
  • 3/4 cup cocoa
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter softened
  • 1 cup Dixie Crystals Granulated Sugar
  • 1 egg
  • 1/2 cup milk
  • 1 tsp vanilla
  • mini chocolate chips

Instructions

  • Preheat to 350 degrees. Line two baking sheets with parchment paper.
  • Whisk flour, cocoa, baking and salt in a bowl. Set aside.
  • Cream butter and sugar until light and creamy, about 3 minutes.
  • Add egg, milk and vanilla. Slowly add dry ingredients.
  • Drop batter by heaping tablespoons onto the prepared baking sheets, 2 inches apart.
  • Bake for 10 minutes. The cookies will be set, but still soft. Cool on the baking sheets for 5 minutes then transfer to a wire rack to cool completely.
  • After cookies have cooled, spread buttercream icing on one cokie and top with another cookie to make a "sandwich."
  • Spoon frosting into a pastry bag (or plastic baggie) and use a star tip for the whites of the eyes.
  • Add two mini chocolate chips.

Notes

These cookies are very rich and would be fine made smaller.
If you roll the dough in your palms and then flatten it will make a more uniform cookie.
