Lemon Poppy Seed Bread
This delicious quick bread adds a touch of elegance to any meal.

- Bread
- 3 cups flour
- 2 1/2 cups sugar
- 1 1/2 tsp salt
- 1 1/2 tsp baking powder
- 3 eggs
- 1 1/2 cups milk
- 1 cup plus 1 Tbs vegetabl oil
- 2 Tbs poppy seeds
- 1 1/2 Tbs lemon juice
- 1 1/2 tsp vanilla extract
- Lemon Glaze
- 1 cup confectioners sugar
- 2-3 Tbs lemon juice
Preheat oven to 350 degrees. Grease two 9x5 loaf pans and set aside.
Place all bread ingredients in a bowl and mix with an electric beater for 2 minutes.
Pour into pans and bake for 55 minutes or until toothpick inserted in middle of bread comes out clean.
Let bread cool completely.
Make lemon glaze and drizzle over top and sides of bread.
