Ingredients

  • 3 cans chunk pineapple drained
  • 1 jar roasted sweet peppers drained
  • 1 red onion finely chopped
  • 2 jalapeno peppers stemmed, seeded and chopped
  • 1 clove garlic minced
  • juice of 1 large lime or lemon
  • salt optional

Instructions

  • In a medium bowl combine drained pineapple, roasted sweet peppers, red onion, jalapeƱo, garlic and lime juice.
  • Stir until well combined and salt if desired.
  • Can be served chilled or at room temperature with tortilla chips.

Notes

I left out the salt for personal preference.
I also didn't have a lime on hand so I used a lemon.
Fresh pineapple can be substituted for canned.
Fresh red pepper can be substituted for roasted sweet pepper.
