Easy Molasses Cookies

These easy molasses cookies are a MUST TRY recipe! Made from a basic make ahead starter cookie mix they are deceptively simple but get rave reviews for taste!

Ingredients

  • 1/3 cup butter softened
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1/4 cup molasses
  • 2 cups Make Ahead Cookie Mix
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • granulated sugar for rolling cookies

Instructions

  • Combine butter and brown sugar in large bowl. Beat at medium speed of electric mixer until well blended.
  • Add egg and molasses and beat until light and fluffy.
  • Stir together cookie mix, baking soda, cinnamon, ginger and cloves in small bowl.
  • Add flour ingredients into butter mixture and beat at low speed until well blended.
  • Chill 3 hours or overnight.
  • Heat over to 350 degrees. Shape dough into 1 inch balls and roll in sugar.
  • Place on ungreased cookie sheet 2 inches apart.
  • Bake 10-13 minutes and cool on rack.

Notes

The cookies came out crispy but softened up the longer they were around (which wasn't long!)
If you like chewy cookies bake a shorter amount of time. I also used parchment paper but a regular cookie sheet is fine.
Chill until you're able to shape dough. I put in freezer to save a little time!
