Slow Cooker Chicken Chili

This delicious Slow Cooker Chicken Chili is a favorite easy meal for busy days.

Ingredients

  • 2 large boneless chicken breasts
  • 2 cups chicken broth
  • 1 can white corn undrained
  • 1 can chili beans undrained
  • 1 can kidney beans undrained
  • 1 small white onion diced
  • minced garlic and cumin to taste
  • 2 tbs chili powder
  • 1/2 cup sour cream

Instructions

  1. Place all ingredients except sour cream in slow cooker and cook on low for 6 hours (or high for 2-3 hours).
  2. Before serving remove chicken and shred (or cut into bite sized pieces).
  3. Stir in sour cream and return chicken to slow cooker.
  4. Garnish with additional sour cream and shredded cheese as desired.

Recipe Notes

If I don't have canned or frozen chicken broth, I will make mine with one chicken bouillon cube per one cup boiling water.
I didn't drain any of the vegetables.
