Have you ever just looked at a word and thought it looked like a foreign object? Your mind went blank and your vision got a little blurry? 

Shish Kabob  shish-ke·bab [shish kuh-bob]

That’s how I felt when I started getting this post ready so that I could share this amazing Chicken Shish Kabob Marinade recipe with you. The letters and words just mushed together. What the heck is a shish kabob anyway?

Chicken and Beef

According to the dictionary, it’s a turkish word for a a dish of pieces of marinated meat and vegetables cooked and served on skewers. Okay, that’s good to know.

I’m a great speller but for the life of me that word just didn’t look right! I had to use the online dictionary for dummies. Okay, it didn’t call me a dummy, but that’s how I felt! For a homeschooling mom I was a little mortified!

Maybe it was “old-timers” disease or momentary brain freeze or whatever. Just rest assured that this recipe is way better than my spelling and vocabulary crisis!

This is one of those great make ahead recipes that allows you to entertain and enjoy time with family while still sharing a fabulous tasting meal.

I used chicken, green peppers, onion and zucchini squash but you can also add pineapple (fresh or canned chunks), smoked sausage and beef tips.

My husband likes to spice things up so you could blend hot peppers or spices in with the rest of the ingredients. Serve it with a salad and potato and you have a great summer meal!

Easy Chicken Shish Kabob Marinade

This easy marinade is delicious for grilling with chicken or beef and vegetables.

Ingredients

  • 1 chopped onion
  • 1 cup honey
  • 3 cloves minced garlic
  • 1/2 cup teriyaki sauce
  • 1/2 tsp ground ginger
  • 1 tsp salt
  • 1/2 cup brown sugar
  • juice from one lemon or 2 tbs bottled lemon juice
  • 2 fresh peppers

Instructions

  • Soak skewers in water before using.
  • Mix all ingredients in a blender or food processor for one minute or until well blended.
  • Brush over chicken and vegetables alternating on the skewer.
  • Marinate in the refrigerator for several hours.
  • Grill until tender or desired doneness.

Notes
