This moist pumpkin bread recipe gets even tastier when topped with cream cheese frosting. Made simple with a box cake mix and canned pumpkin!

Some of my favorite family moments have been spent gathered around a beautifully decorated table with those I love, sharing good food and great conversation.

When the leaves begin to turn and the weather cools nothing delights my senses quicker than the smell of hot instant russian tea and a warm pumpkin bread recipe straight from the oven.

Even though my children are all grown, the years of raking trails in the leaves to create roads for their bikes or jumping into giant piles are forever captured in my heart and photo albums!

Another favorite family activity as the kids were growing up was roasting hot dogs and marshmallows over the fire pit after a morning of working together outside in the yard.

Even though I miss those bittersweet moments of yesterday this time of year is still my favorite, and I enjoy creating new memories with my grandsons Aiden and Henry.

My kids always loved to bake with me, and now my grandsons get to spend time with Nana passing down the family tradition! I believe learning to follow instructions helps in every area of life!

The best thing about this recipe is using ingredients you probably already have on hand: pumpkin, cake mix, instant pudding and a smidgen of pumpkin pie spice.

(Just a tip: this recipe isn’t only for fall. Buy some extra canned pumpkin and make this yummy goodness all year!)

The homemade glaze with cream cheese is to die for! It’s worth a little bit of work for the delicious frosting! I would refrigerate after making just to be safe or if you want to freeze the bread without the frosting it’ll last about two months!

Pumpkin Bread with Cream Cheese Frosting

This easy pumpkin bread with cream cheese frosting is a guaranteed hit to ring in the fall season. With just a few handy ingredients it’s perfect for school parties, family dinners and church potlucks.

Ingredients

Bread

  • 1/3 cup sugar
  • 1/3 cup oil
  • 3 eggs
  • 1 15- oz can pumpkin
  • 1 box yellow cake mix
  • 1 3.4 oz vanilla instant pudding mix
  • 1 tbs pumpkin pie spice

Frosting

  • 2 1/2 oz cream cheese softened
  • 3 tbs milk
  • 1 1/2 cup powdered sugar
  • 1 tsp vanilla

Instructions

  • Combine sugar, oil, eggs and pumpkin in mixing bowl and beat at high speed for 1 minute.
  • Add cake mix, pudding mix and pumpkin pie spice and beat for 2 minutes.
  • Pour into 2 greased and floured loaf pans.
  • Bake at 350 degrees for 50 to 60 minutes or until loaves test done.
  • Cool in pans.
  • Mix together cream cheese, milk, powdered sugar and vanilla. (I used a whisk.)
  • Turn bread onto a plate and drizzle with frosting.

Notes

1 cup chopped pecans can be added if desired.

    1. Audrey, we’ve homeschooled for 21 years so our table was rarely cleaned off except to eat dinner! With only one student left at home it’s a bit easier to dress it up but I do miss the chaos and noise at times. Not all the times but sometimes!
