Lemon Cream Pie

Okay, so don’t look too closely at the pie 🙂 I’m trying to improve on my food photography so I was working on the pics for a while and the RediWhip melted. So sad. Our house gets early morning sun in the den and late day in the living room and I couldn’t wait that long. Thus, the soggy looking Lemon Cream Pie. I promise it’s delicious, though!

1/2 (12 oz) can frozen lemonade, thawed
1 (14 oz) can sweetened condensed milk
1 (8 oz) container whipped topping, thawed
Juice of one lemon
1 (9 inch) pie crust, baked
3 tbs slivered almonds, toasted


  1. Combine lemonade, sweetened condensed milk, whipped topping, and lemon juice in a large mixing bowl. Beat for 1 minutes with an electric mixer set on medium.
  2. Spoon into crust. Refrigerate for 2 hours.
  3. Sprinkle with almonds and serve (or use Rediwip).

I doubled the recipe which resulted in two pies.
I beat the ingredients by hand, which probably resulted in a less firm pie. Take the time to use the mixer!
I left out the juice of one lemon and the toasted almonds.
Used Rediwhip to top the pie.
It was totally delicious and refreshing for a summer dessert!

  5. This looks wonderful! You know…I think even the professionals have a difficult time with real foods….often they add things that help them to stand up to the heat…but make the unedible. I’d much rather have the reward of the real deal!
