Crock Pot Lasagna

My family loves lasagna cooked in the crock pot! It’s so easy to do the day before (especially for Sunday lunch) and is always a crowd pleaser.

Crock Pot Lasagna

2 boxes lasagna noodles (broken into smaller pieces)
1 24 oz. container ricotta or cottage cheese
2 eggs
1 tsp garlic, minced
2 pounds ground beef (or ground turkey)
2 26 oz. jars spaghetti sauce (or make your own)
4 cups Italian 3-cheese blend, shredded (or mozzarella, I have also used sliced cheese)

  • Stir together ricotta cheese, eggs and garlic.
  • Cook ground beef in large skillet then drain. Stir in spaghetti sauce. Feel free to add whatever seasonings you enjoy. I’ll use diced tomatoes, onions and mushrooms, too, if I have them.
  • Layer lasagna noodles, ricotta cheese mixture, shredded cheese, and beef mixture in a greased crockpot, ending with the beef.

I make this the night before and refrigerate and do NOT cook the lasagna noodles. The sauce will help soften the noodles.

This recipe is completely up to interpretation! Make sure and use plenty of sauce (the liquid) so that it doesn’t dry out. This also makes a ton so you can adjust the recipe accordingly. I start my crock pot on high to get it warmed up then leave it on low for about 3-4 hours while we’re at church.

    Sorry it took me so long to get back over here after your comment. We had a kitty that passed, so I kind of checked out for a few days. Just a kitty, I know, but you get so attached sometimes.

    You are SO LUCKY that your Michael’s gives you an additional 10% on competitors coupons!! My Michaels seems to take them a little begrudgingly. (is that really a word?!) And although I’ve been doing it for years, now they won’t take the competitor’s coupons that are xx% off your total purchase…only the ones that are good for a single item. I asked for a supervisor and told them I had been using those types of coupons in Michaels for years, and she told me that they had NEVER taken those, and if someone did take one from me, they probably got in trouble….great. Joann’s still gladly takes them, and they seem to be just a tad cheaper on some things anyway, so I know where I’ll be going when I can! I SOOO wish we had a Hobby Lobby or AC Moore here since I’m always hearing about all the good deals people get there!

    So…were you able to get any crazy good Black Friday deals???
