Easy Strawberry Bread - Marty's Musings

One of our favorite family traditions each year is strawberry picking at a local farm.

This year the weather couldn’t have been more beautiful or the berries more perfect.

You might say we spent a few dollars on them! Yes, these are all ours!

It took the four of us just over an hour to pick them and about two hours to slice and freeze the majority of them.

Have you ever seen such beautiful strawberries?

I posted a pic on Instagram (follow me here) of the strawberry bread I made and had several requests for the recipe.

The great thing about this recipe is that you can use fresh strawberries or frozen. No matter what time of year I make the bread I’m always reminded of the fun we have when we spend time together creating memories!

Why don’t you whip up a batch of this bread and see if your family enjoys it as much as mine!

Ingredients
  1. 3 cups all purpose flour
  2. 1 tsp baking soda
  3. 1 tsp salt
  4. 1 tbs cinnamon
  5. 2 cups sugar
  6. 4 eggs, beaten
  7. 1 1/2 cups vegetable oil
  8. 2 cups thawed, sliced strawberries with juice (fresh or frozen)
Instructions
  1. Grease and flour two 5x9 loaf pans.
  2. Combine dry ingredients.
  3. Stir in rest of ingredients until mixture is moist.
  4. Spoon batter into loaf pans.
  5. Bake at 350 degrees for 60 to 70 minutes or until toothpick inserted into center comes clean.
  6. Sprinkle sugar over top of warm bread.
Notes
  1. Make sure to grease and flour the pans well. I prefer using glass over metal.
  2. Do not overmix ingredients.
  3. You can add 1 cup or more of chopped nuts if you like.
  4. These can also be made into muffins, with bake time ranging from 20-25 minutes. Just keep checking so that the muffins aren't overcooked.
